Cholesterol in food vs blood cholesterol: what changed in the science
For most people, the cholesterol you eat has only a modest effect on the cholesterol in your blood. Your liver manufactures the large majority of your body's cholesterol and dials its own production down when you eat more, a feedback loop that buffers dietary intake. That is why the US Dietary Guidelines dropped their long-standing 300 mg daily cholesterol limit in 2015, and why eggs and shrimp were quietly rehabilitated. The dietary factors that genuinely move LDL, the "bad" cholesterol, are saturated and trans fats pushing it up and soluble fibre pulling it down.

How the villain got demoted
The original logic was seductively direct: cholesterol clogs arteries, this food contains cholesterol, therefore avoid the food. Decades of feeding studies undermined the middle step. Absorption of dietary cholesterol varies from about 20 to 80 percent between individuals, the liver's own synthesis adjusts to intake, and for the majority of people a large change in dietary cholesterol shifts blood LDL only slightly. A minority, so-called hyper-responders, react more strongly, which is one reason personal blood tests beat blanket rules. By 2015 the US guidelines removed the numeric limit, stating that cholesterol was no longer "a nutrient of concern for overconsumption", while still advising that overall eating patterns stay low in saturated fat.
Why eggs and shrimp were false alarms
Look at what surrounds the cholesterol. Eggs carry roughly 400 mg of cholesterol per 100 g but only about 2.5 g of saturated fat. Shrimp is even cleaner: around 156 mg cholesterol per 100 g with essentially zero saturated fat and 20 g of protein. A controlled trial in the 1990s found that adding 300 g of shrimp a day raised HDL alongside LDL and did not worsen the ratio. Compare that with butter: a similar cholesterol story (218 mg) but 49 g of saturated fat per 100 g, which is what actually drives LDL upward. What actually moves LDL
- Saturated and trans fat, upward. Meta-analyses of controlled feeding trials show replacing saturated fat with polyunsaturated fat lowers LDL and cardiovascular events. Trans fat is worse per gram and now largely banned in the EU.
- Soluble fibre, downward. The beta-glucan in oats (about 10 g total fibre per 100 g dry) binds bile acids and reliably lowers LDL by around 5 to 10 percent at 3 g of beta-glucan a day, an effect strong enough that EFSA approved the health claim. Legumes, barley and psyllium work the same way.
- Weight, exercise and genetics. Weight loss modestly improves LDL and triglycerides; genetics set the baseline, which is why identical diets produce different blood tests in different people.

Who should still be careful
This is population-level guidance, not a personal prescription. People with familial hypercholesterolaemia, diabetes, existing cardiovascular disease, or who know they are hyper-responders may be advised to watch dietary cholesterol specifically, and anyone on lipid-lowering medication should follow their clinician's targets rather than internet averages.
